Yield: 4 joes
Ingredients:
1 package Morningstar Farms Burger Crumbles (the kind that comes in an envelope, not a tube)
4 Tbsp. catsup (I use Heinz brand)
4 Buena Vida Fat Free Flour Tortillas
1 oz.* low-moisture part-skim mozzarella cheese (I use Kroger brand)
1 oz.* extra sharp cheddar cheese (I use Kraft brand)
Emeril's Original Essence (to taste)
* These are for ver. J as dictated on my diet log; for ver. I, double the amount of each cheese.
Instructions:
Place a saucepan or skillet over medium heat; while pan is heating, grate the cheese and microwave the tortillas on high for one minute. When pan is heated, add a minimum of margarine or non-stick cooking spray, then add burger crumbles. Cook burger crumbles until they become soft, stirring every minute. When crumbles are heated through, add the Essence and cook for one more minute. Take the pan off of the heat and add the catsup. Stir to combine, then layer the mixture onto the tortillas, top with cheese, fold and serve burrito-style.
